Bars & pubs
Shifts: built around a late close, not a dinner service.
Categories: Spirits, Draught, Bottled beer, Wine, Mixers, Garnish.
Counts in: kegs, bottles and part-bottles, because a bar counts what is left in the bottle.
Cafes & bakeries
Shifts: Open, Mid-day, Afternoon, Close. Open starts at 6am; there is no dinner.
Categories: Coffee, Tea, Dairy, Bakery, Syrups, Packaging, Retail.
Counts in: beans by the kilo, milk by the litre, cups by the sleeve.
Pizza shops
Shifts: Prep, Lunch, Dinner rush, Close.
Categories: Dough, Cheese, Sauce, Toppings, Boxes & packaging, Beverage.
Counts in: 00 flour by the bag, mozzarella by the case, boxes by the box.
